Lynda's Favorite Pork & Bacon Recipes

PORK TENDERLOIN WITH APRICOTS

Ingredients:
1 Neuadd Fach Baconry Tenderloin
Approx. 200g ‘Ready to Eat ‘ Apricots
Neuadd Fach Baconry Streaky Bacon

Line a meat tin with foil. Slit the tenderloin lengthways, and open it out. Lay under Clingfilm and flatten with a rolling pin. Put apricots down one side and then enclose. Lay the bacon out in strips and the put the tenderloin on the top. Wrap up the bacon round the tenderloin to totally seal and enclose it. Cook at gas mark 6 for about 40 minutes until bacon is nicely brown.

Enclose the cooked tenderloin in the foil and leave to stand for a few minutes before serving. This is also lovely served cold with salad.

 

MUSTARD SAUCE

To serve with tenderloin or any pork dish.

Melt 1oz butter add 1 tablespoon flour, slowly add ¼ pint milk and the juices from the pork. Add 1 tablespoon (or to taste) of whole grain mustard. Serve hot

 

RED CABBAGE, APPLE & ONION BAKE

Shred one small or ½ large red cabbage, slice 1 large cooking apple,

& slice 1 large onion. Put into a saucepan in layers. Melt 1oz butter, add 1 tablespoon malt vinegar & 1 tablespoon brown sugar and pour over the cabbage in the saucepan. Simmer gently until cabbage and onion are cooked. Serve hot or cold.

SLIMMER'S TENDERLOIN

Marinade overnight 1 Neuadd Fach Baconry tenderloin in
4 tablespoon's teriyaki sauce,
2 tablespoons tomato ketchup,
3 tablespoons hoisin sauce,
2 tablespoons sherry,
2 tablespoons marmalade,
2 tablespoons soft brown sugar,
1 tablespoon lemon juice.

Line a meat dish with foil. Roast tenderloin on a rack for about 20 minutes on Gas 9/240C/475F Leave to rest for 5 minutes while you heat rest of marinade.

 

SMOKED BACON SAUSAGE LOAF

Take 1 or 2 packs Neuadd Fach Baconry smoked streaky bacon and line a loaf tin with it. Put 1 pack of Neuadd Fach Baconry sausagemeat on top of bacon and then put a layer of smoked bacon on top. Cook in oven on Gas 4 for about 1 hour or until bacon is golden and sausagemeat cooked. Turn out of pan. Serve hot or cold. (Ideal in sandwiches).

 

BACON with Cabbage & Potato

Ingredients:
Neuadd Fach Baconry Bacon
Cooked Cabbage
Cooked potatoes sliced
Mustard seeds

Fry bacon until fat runs, add potatoes and brown. Add cabbage and heat through until piping hot. Add mustard seeds and cook until they pop. Serve straight from the pan.

BACON SAUCE FOR PASTA

Ingredients:
Neuadd Fach Baconry Bacon Bits or Streaky Bacon (or any good quality dry cured bacon)
Sunflower oil, Onion, Tinned tomatoes,Chopped Herbs (Optional), Seasoning, Worcester sauce, Soy Sauce.

Fry the onion in a little sunflower oil until soft, add chopped bacon and fry until nicely browned. Add tinned tomatoes, season, and add Worcester sauce & soy sauce to taste, and a few herbs if liked. Bring to the boil and simmer for 10 minutes. Serve with cooked pasta of your choice.

 

BACON, POTATO, & CHEESE BAKE  

Layer chopped Neuadd Fach Baconry Bacon , sliced potato, and finely sliced onions in a casserole dish, finishing with potatoes. Melt 1oz butter, add 1 tablespoon flour, gradually add ½ pint milk and grated cheese. Pour sauce over the bacon mix. Cover and cook for 1 hour at Gas mark 4. Take off lid and cook for a further hour until brown.

SAUSAGE CASEROLE

Ingredients:
1 pack of Neuadd Fach Baconry Sausages
1 tin puy lentils
1oz butter or oil
1 onion
1 tin chopped tomatoes
1 teaspoon sugar
1 teaspoon dried thyme

Fry onion in butter or oil until soft, add lentils, tomatoes, sugar & thyme. Cook sausages in separate pan until brown, add to lentil mixture. Cook gently for about 15 minutes. Season to taste.

 

SPARE RIB CHOPS CASEROLE

Ingredients:
Root vegetables, peeled & chopped
Water or stock
Neuadd Fach Baconry Spare rib chops
Dried stuffing mix
Butter

Put vegetables in bottom of pan. . Add water to top of vegetables. Rest spare ribs on top. Sprinkle over dried stuffing mix. Butter the lid. Put into oven and cook slowly for about 2 hours on gas mark 3 (325F, 170C)
