Line a meat tin with foil. Slit the tenderloin lengthways, and open it out. Lay under Clingfilm and flatten with a rolling pin. Put apricots down one side and then enclose. Lay the bacon out in strips and the put the tenderloin on the top. Wrap up the bacon round the tenderloin to totally seal and enclose it. Cook at gas mark 6 for about 40 minutes until bacon is nicely brown.
Enclose the cooked tenderloin in the foil and leave to stand for a few minutes before serving. This is also lovely served cold with salad.
