What is dry cured bacon?

Our Pork has a salt/sugar cure mixture sprinkled over it and then the juices that come out of it are discarded. This means that when you fry it in the pan, no white stuff comes out of it.

What is the difference between a Boiling Bacon and a Gammon Joint ?

On our premises a Boiling Bacon Joint comes from the shoulder and is cured like dry cured bacon, and then it is rolled into a Joint. The Gammon Joints come from the Back Leg and are brine injected, as it is difficult to get the salt cure to go in as far as the bone because it is so large. The Gammon Joints are then left, and any juices that come out are discarded. We then cut them into Gammon Joints.

Why are your pigs not Free Range or Organic?

We have very heavy clay land and a high average rainfall. We would ruin the structure of our soil, and if the pigs were up to their knees in mud it would be a welfare problem. Our pigs are loose housed in the buildings and are fed a really good diet which is mixed on the farm and fed to the pigs from hoppers so the feed is kept clean. We certainly don't use antibiotics unless it is absolutely necessary.
